Kombucha is a fermented, lightly carbonated beverage made from
black tea,
sugar and
water.
When you add a SCOBY (Symbiotic Culture Of Bacteria and Yeast), which is full of good microorganisms, then spontaneous fermentation gets underway. A few additions, like fruit or specially picked herbs, lead to a refreshing, bubbly, and slightly sour drink.
