Veggie lentil omelette is a true masterpiece - an omelette which looks and tastes just like an egg omelette ... And even slightly better.
Lentils really are one of our favorite legumes - you can use it in sooo many different ways! One way to use red lentils is to make a delicious omelette - totally egg-free, of course.
Fill it with your favourite raw or grilled veggies, top it with some dressing and your best breakfast, afternoon snack or dinner is served.
Prep time: 30 min
Ingredients
1 cup red lentils, soaked for 4 hours
1 cup of water
1 tbsp nutritional yeast
1 tsp salt
1 tsp sodium bicarbonate
1 tsp apple cider vinegar
sesame oil for a pan
toppings of choice (cooked/grilled/raw veggies, tofu ...)
hemp style dressing or other dressing by choice
Directions
Blend all the ingredients in blender until smooth. Pour the batter into a bowl, cover it with a cloth and leave it to rest at room temperature for about 10-15 minutes. Give a batter a good stir.
Heat the omelette pan. add a bit of sesame oil, pour in about half a cup of a batter and bake for 3 minutes on each side.
*In case you decide to prepare the batter a day before, be sure to add sodium bicarbonate and apple cider vinegar just before baking.
Store the batter in a glass sealed jar or container in fridge.
Plating:
Place the omelette on a plate and fill it with some fresh or roasted veggies. Drizzle it with our Hemp style dressing. It’s an absolute winner combo.
